Base | 批底 (Steps | 做法) :

  50g  Flour | 麵粉
  30g  Unsalted butter | 無鹽牛油
  10g  Fine granulated sugar | 幼砂糖
  10g  Beaten egg | 全蛋
  some Nutella spread Nutella 榛子朱古力醬


Filling | 餡料 :

125g  Cream cheese, room temperature | 奶油乳酪,室溫回溫
  15g  Caster sugar | 細砂糖
125g  Whipping cream | 淡忌廉
 1 pc  Egg yolk | 1只蛋黃
    5g  Gelatin | 魚膠粉

  35g  Boiling water | 熱滾水
  60g  Milk | 鮮奶

  1. 1個6"糖酥批皮底(做法),均勻塗上Nutella榛子朱古力醬。
  2. 用熱水將魚膠粉溶掉備用。
  3. 大攪拌盆中將奶油乳酪打滑。
  4. 在另一中攪拌盆中將糖和蛋黃打起至乳霜狀。
  5. 小窩煮滾牛奶,倒入 (4) 糖和蛋黃,混合後倒回攪拌盆中;加入 (3) 已打滑的奶油乳酪,再仔細地打滑;加入 (2)魚膠粉溶液,混合均勻。
  6. 在另一大攪拌盆中將淡忌廉打起,加到(5)內,用橡膠刮刀快速拌勻。把麵糊倒入模型,晃動平整表面。放入雪櫃冷凍3小時或1晚,取出,唧上栗子蓉
  1. One 6" pie base (steps), spread nutella evenly on top of crust.
  2. Dissolve gelatin in hot water.
  3. In a big bowl, blend cream cheese until smooth.
  4. In a medium bowl, beat sugar and egg yolk until creamy.
  5. Bring milk to a boil, add in (4) sugar and egg yolk mixture, hand whisk well. Pour it back to the egg yolk mixing bowl, add (3) blended cream cheese, blend until smooth, add (2) gelatin solution, mix well.
  6. In a big bowl, beat whipping cream until it forms soft peak. Add to (5) mixture, scrapper well. Pour the batter in the cake mould on top of the pie crust, cool in fridge for at least 3 hours or overnight. Pipe chestnut paste on cake top.
