Broccoli and Apple Quiche | 西蘭花蘋果鹹批

Prepare pie base in advance, you can bake any Quiche any time! 先做好批底,隨時都可以製作美味餡批 !





  • Yield : One 9" cake | 1個9"批 


Base | 批底 (Steps | 做法) :

60g  Flour | 高根麵粉
60g  Flour | 低根麵粉
60g  Unsalted butter | 無鹽牛油
15g  Ice water | 冰水1大匙(約15g)
35g  Beaten egg | 全蛋
little salt | 鹽小許


Filling | 餡料 :

Cream cheese paste | 忌廉芝士醬:
200g  Cream cheese | 
忌廉芝士
150g  Whipping cream | 淡忌廉
2 pcs  Whole egg | 2只全蛋

250g  Broccoli (green & white) | 西蘭花、白蘭花各半,共250g
1/4 pc Onion | 1/4個洋蔥 

1 apple | 1個紅蘋果
2 gloves garlic, chopped | 蒜2瓣
  10g  Butter | 牛油
some shredded cheese | 芝士碎小許放面用

  1. 1個9"鹹批皮底先做好(做法),備用。

  2. 蒜、洋蔥、蘋果切小粒;西蘭花、白蘭花洗淨切小朵,先用熱水燙7成熟,撈起,去除多餘水份待用。

  3. 忌廉芝士醬做法: 放忌廉芝士到攪盤中室溫回溫後攪拌均勻,將蛋分次加入攪拌拌勻,加入淡忌廉拌勻

  4. 平底鍋中,融化牛油,放入蒜,洋蔥,略炒至軟身,放西蘭花,加小許鹽,略翻,放蘋果粒,攪拌均勻,再放入芝士牛油麵糊,熄火,攪拌均勻後倒進批內,略為平正表面,灑小許碎芝士。

  5. 放進已預熱焗爐並調至200°C,烤約22分鐘或至金黃,取出稍放涼切件。

  6. 要吃更酥脆鹹批,吃前放預熱多士爐焗1~2分鐘

  7. 吃剩的要放雪櫃,盡快食用

  1. One 9" pie base (steps), prepared and set aside for use.

  2. Dice garlic, onion, apple; cut broccoli into 2cm size, boil in hot water until al dente, drain, set aside for use.

  3. Steps of cream cheese paste: Put cream cheese in a large mixing bowl, return to room temperature, whisk until soft and creamy, add egg in portions, whisk and mix well, add whipping cream, whisk well.

  4. In a skillet, melt butter, cook garlic, onion, broccoli, stir occasionally, fold in apple, stir, then put in cream cheese batter, off heat, stir and transfer to the pie base, level until even, sprinkle some shredded cheese on top.

  5. Bake in preheated oven and adjust it to 200°C for about 22 minutes or until slightly golden. Take out and let cool a bit before slicing.

  6. To get crispier base, put the slice into the preheated toaster for 1~2 minutes, serve with soup or coffee.

  7. Put the unconsumed pie into the fridge, consume within the few day.
