Great lemon cheese cake! 冰涼檸檬芝士餅略帶微酸,醒胃的甜品 !

Base | 批底 (Steps | 做法) :

  50g  Flour | 麵粉
  30g  Unsalted butter | 無鹽牛油
  10g  Fine granulated sugar | 幼砂糖
  10g  Beaten egg | 全蛋
3~6 pcs Dark choco buttons (55%) | 朱古力粒 55% 


Filling | 餡料 :

125g  Cream cheese, room temperature | 奶油乳酪,室溫回溫

  15g  Caster sugar | 細砂糖
125g  Whipping cream | 淡忌廉
 1 pc  Egg yolk | 1只蛋黃
    5g  Gelatin | 魚膠粉

  35g  Boiling water | 熱滾水
  60g  Milk | 鮮奶
1/4 pc Lemon | 1/4個檸檬

  1. 1個6"糖酥批皮底(做法),平均塗上巧克力溶液。
  2. 檸檬刨皮榨汁待用。
  3. 用熱水將魚膠粉溶掉備用。
  4. 攪拌盆中將糖和蛋黃打起至奶白乳霜狀。
  5. 另一大攪拌盆中將奶油乳酪打滑。
  6. 小窩煮滾牛奶,加入 (4) 糖和蛋黃,混合;再加入 (5) 已打滑的奶油乳酪,再仔細地打滑。最後加入 (3)魚膠粉溶液,混合均勻。
  7. 大攪拌盆中將淡忌廉打起,加入(6),加入(2)檸檬皮和汁液,快速拌勻。把麵糊倒入模型,晃動平整表面。放入雪櫃冷凍3小時或1晚,取出食用
  1. One 6" pie base (steps), spread melted chocolate evenly on top of crust, set aside for use.
  2. Peel and squeeze lemon, set aside lemon zest and juice.
  3. Dissolve gelatin in hot water.
  4. In a medium bowl, beat sugar and egg yolk until creamy white.
  5. In a big bowl, blend cream cheese until smooth.
  6. Bring milk to a boil, add (4) sugar and egg yolk mixture, hand whisk well. Add (5) blended cream cheese, blend until smooth. Add (3) gelatin solution, mix well.
  7. In a big bowl, beat whipping cream until it forms soft peak. Add in (6), add (2)lemon zest and juice, hand whisk quickly. Pour in the cake mould. Cool in fridge for at least 3 hours or overnight. Serve.
