Blueberry Walnut Muffin | 藍莓核桃鬆餅

Ingredients | 材料 :

  • Yield : 8~10 numbers 6" muffins
(A) 
60g  Unsalted butter (room temperature) | 無鹽牛油(室溫)
  50g  Egg, beaten | 雞蛋,打勻
1 tablespoon Yogurt, original flavor | 原味酸奶,1湯匙
120g Cake flour | 低根麵粉
1/4 teaspoon Baking powder | 泡打粉,1/4茶匙

(B)
 50g  Dried blueberry | 藍莓
 20g  Walnut, chopped | 核桃,切碎
 10g  Dried cranberry | 紅莓乾

  1. 攪拌盆中放入牛油,室溫回溫。
  2. 焗爐先以200°C預熱。
  3. 瑪芬(鬆餅)焗盤放入小紙杯。
  4. 低根麵粉和泡打粉混合,過篩備用。
  5. 打發牛油與糖 (以電動打蛋器先慢速,再轉高速打發室溫牛油,分次加入糖,高速攪拌至奶白色)。
  6. 分3~4次加入全蛋液,一邊以電動打蛋器仔細地混合。
  7. 篩入一半已過篩的粉,一邊用橡膠刮刀翻拌至完全融合。加入藍莓、核桃和紅莓乾,用橡膠刮刀翻拌;再加入另一半已過篩的粉,用橡膠刮刀翻拌至完全融合。若發現還有粉粒,用橡膠刮刀壓平至沒有粉粒為止。
  8. 用湯匙把麵糊放進紙杯中,晃動模型,平整表面。
  9. 放入已預熱的焗爐並調至180°C,焗約20分鐘或至金黃取出放涼架,即可食用。
  1. Place butter on counter till it becomes room temperature.
  2. Preheat oven to 200°C.
  3. Place paper cups into muffin mold.
  4. Mix cake flour and baking powder, sieve, set aside.
  5. Cream butter and sugar (beat butter in low speed first, turn to high speed, add sugar in portions until the mass has lightened to a yellowish-white color. This takes 6-7 minutes).
  6. Add beaten egg in 3~4 portions, beat well after each addition.
  7. Fold in half sieved flour, mix well with a scrapper. Fold in (B) ingredients, mix well with a rubber scrapper. Fold in remaining flour, mix well with a scrapper. Press remaining lumps against the sides of the bowl until the mixture is fine and shiny.
  8. Put batter into paper cup in muffin mold, level until even.
  9. Bake in a preheated oven and adjust it to 180°C, bake for about 20 minutes or until golden brown. Take out from oven, cool on a wire rack.
*Note | 心得 :
  • 不可用冷藏蛋,加蛋液時要分多次加入,一次加太多難以拌勻,容易出現水油分離。
  • 如果出現水油分離,加小許低根粉拌勻便可。
  • Must not use eggs directly from the fridge; add egg mixture in portions so it can be mixed well with the butter mixture.
  • If batter looks like bean curd, add a small portion of cake flour and mix well. Problem will be solved.
